Peruvian Recipies

Papa a la Huancaina: (typical Peruvian appetizer )

    Ingredients:
  • 4 white potatoes
  • 5 pitted black olives (to garnish)
  • 3 Hard boiled egg (to garnish)
  • 5 leaves of lettuce (to garnish)
    Sauce:
  • 1 lb of cottage cheese
  • small package of soda crackers
  • 1 tsp of cooking oil
  • 1/2 a yellow hot chilli pepper (if not available use red hot chilli pepper and 3/4 tsp of Turmeric for color)
  • 2 tablespoons of Chili
  • 1/3 cup of evaporated milk
  • 1/2 tsp of salt

Peel and boil the potatoes. While the potatoes are cooking prepare the sauce.

Use a blender to combine the ingredients for the sauce. Wash the hot pepper (keep the seeds if you want to make the sauce hot, otherwise remove them). Blend the sauce well, it should be a thick yellow sauce (add Turmeric spice to give more color if needed. If it's not think add more soda cracker.

Slice the potatoes lengthwise and the hard boilded egg. Garnish salad dishes with leafs of lettuce, placing the sliced potato on top. Cover the potatos with ample sauce. Complete with black olives and sliced hard boiled egg. 5 servings
