Peruvian Recipies

Anticuchos de Corazón: (a traditional dish)

    Ingredients:
  • 1 Beef Heart
  • 1 tablespoon of Cumin
  • 4 tablespoons of Chili
  • 2 tablespoon of Garlic
  • 1 cup of vinegar
  • 1 teaspoon of meat tenderizer (optional)
  • salt & pepper
  • Fresh Mushrooms (optional)
  • Kebobs or Barbecue sticks (usually bamboo sticks about 20 cm long)
  • Corn on the cob
    Dressing:
  • 3/4 cup of oil
  • 1/4 cup of vinegar or cooking wine
  • 2 tablespoons of Chili
  • 1 teaspoon of salt

Cut the heart into cubes of about 2 cm. Marinate the meat in the vinegar, cumin, garlic, salt, pepper, meat tenderizer & chili, for at lest two or three hours at room temperature. (Better yet, overnight). Place 3 or 4 pieces of meat on each kebob with fresh mushrooms, & barbecue the meat while bathing it in the dressing. Once cooked serve with corn on the cob. 5 servings.
