Peruvian Recipies
Anticuchos de Corazón: (a traditional dish)
Ingredients:
- 1 Beef Heart
- 1 tablespoon of Cumin
- 4 tablespoons of Chili
- 2 tablespoon of Garlic
- 1 cup of vinegar
- 1 teaspoon of meat tenderizer (optional)
- salt & pepper
- Fresh Mushrooms (optional)
- Kebobs or Barbecue sticks (usually bamboo sticks about 20 cm long)
- Corn on the cob
Dressing:
- 3/4 cup of oil
- 1/4 cup of vinegar or cooking wine
- 2 tablespoons of Chili
- 1 teaspoon of salt
Cut the heart into cubes of about 2 cm. Marinate the meat in the vinegar, cumin, garlic, salt, pepper, meat tenderizer & chili, for at lest two or three hours at room temperature. (Better yet, overnight). Place 3 or 4 pieces of meat on each kebob with fresh mushrooms, & barbecue the meat while bathing it in the dressing. Once cooked serve with corn on the cob. 5 servings.
