Peruvian Recipies
Ceviche de Pescado: (This is a very popular Peruvian dish)
Ingredients
- 1 Kg of Sole or Sea Bass
- 1 of a cup of lemon juice
- 1 large purple onion cut in thin slices
- 1/4 cup of chopped celery
- 1 Yellow Pepper, sliced
- Salt & Pepper
- 1 Hot Chili Pepper, cleaned & sliced in thin slivers of a cm in length
- 1/2 a teaspoon of ginger (ginger juice)
- 1 tablespoon of garlic
- 1 tablespoon of freshly chopped Coriander
- 5 cobs of corn
- 3/4 of a Kg of Sweet Potato
Cut the fish into small pieces of about 1 1/2 cm. Wash & flavor the fish with salt & pepper. Mix all the ingredients (except the corn & Sweet Potato), & marinate the fish for an hour at room temperature. Serve with the sweet potato & corn. 5 servings.
